    Margarine

  • 2 kg


    Caster Sugar

  • 2.7 kg


    Plain Flour

  • 175 g


    Baking Powder

  • 1 tbsp


    Vanilla Essence

  • 1 tbsp


    Cinnamon

  • 12


    Bananas For Decoration (Optional)

Instructions
  1. Pre-heat the oven to 180c /350f / Gas 4

  2. Peel the bananas and then crush with a folk

  3. Beat together the margarine and sugar, then add the eggs, alternately with the flour and baking powder

  4. Fold in the crushed banana, vanilla essence and cinnamon

  5. Pour the mixture into a greased tins, and top, if liked, with long thin slices of banana

  6. Bake in the pre-heated oven for approx 30-35 minutes. Until a skewer inserted into the centre of the sponge comes out clean

  7. Cool slightly then turn onto a wire tray

  8. When completely cool. slice and serve
