5.4Kg Skinless/Boneless Hokki Fish FilletFrom Holdsworth frozen
12Tablespoons Lemon Juice
2Teaspoons Black Pepper
4Teaspoons Olive Oil
1Kg White OnionsSliced
2Teaspoons Mixed Herbs
1Kg Green PeppersSliced
0.38Tins (A10) Chopped Tomatoes
113Grams Soft Brown Sugar
2Teaspoons Chilli Powder

Oven 200 c /gas mark 6
Cut fish into portions and pat dry with kitchen towel .Place into greased tins.
Sprinkle over salt and lemon juice and leave for 1 hour.
Heat oil in a saucepan add onions and fry for 1 minute.
Add garlic, chilli powder and fry for another minute.
Add mixed herbs, peppers and fry for another minute.
Add remaining ingredients.
Spoon the mixture over fish, cover and bake in oven for 20-25 mins
(We know all the cooks have their own way of doing this dish, which it is fine if you do your own version as long as it is with the white fish.)
