Peel and grate the carrots and apples, measure out all the ingredients and grease deep flan tins.
Beat the oil, sugar and eggs together then add the golden syrup, vanilla, cinnamon, orange zest and juice. Add the sifted flour, bicarbonate of soda, baking powder, dried fruit, grated carrot and apple and mix together well.
Pour into the greased flan tins and bake for 45 minutes to 1 hour. Tip onto a cake rack and cool before cutting into portions.
Serve warm out of the oven dusted with icing sugar or when completely cold spread with orange icing.
