Place the lamb in large pan & heat at a hot temperature until all the meat is sealed
Add the onions, garlic & spices to the pan, cook for approximately 20 minutes, mixing regularly to avoid burning
Add the lentils and remaining fresh ingredients
Cover with water and cook on a low heat for approximately 1 hour
Add the mango chutney and coconut milk & cook until meat is tender
Adjust seasoning, consistancy & garnish with fresh chopped coriander.
Serve with rice
