Put the strong white flour and fast action yeast, sugar and salt into a bowl
Add the olive oil and then slowly add the water to bring the mixture to a dough, turn onto the floured work surface and knead for approx 5 minutes
Roll out the dough and place onto a greased and floured pizza tin and set aside to prove for 30 minutes
Meanwhile finely chop the onion and place in a saucepan with the olive oil and crushed garlic, gently cook with the lid on until softened, add the balsamic vinegar, herbs and chopped tomatoes and bring to the boil. Season with freshly ground pepper and then add the fish fillets and cook gently stirring for a few minutes
Spread the mixture evenly over the pizza dough, cover with grated cheese and topped with sliced tomato.
You can add other toppings to your pizza such as olives, peppers or mushrooms
