Dice the pears and finely shred the mint. Mix these into the mincemeat.
Melt the margarine
Cut filo pastry into 18cm squares
Very lightly butter a square of filo pastry and place another lightly buttered square on top of this and repeat once more giving three sheets
Place a spoon of the mincemeat at one end, fold in the sides then roll into parcels
Place the parcels on a lightly greased tray and lightly brush each one with the melted margarine. Sprinkle with the caster sugar and then bake in the oven for approx 20 minutes until the pastry is golden brown
Keep filo pastry covered with a damp cloth at all times to stop it drying out
