Use Peppers, Courgettes, Red onions, Aubergine, cherry tomatoes etc. for the roasted vegetables. For winter vegetables use carrots, parsnip, sweet potato.
Boil the lentils in vegetable stock until soft, drain well and allow to cool.
Make the pastry, line tins and part bake.
Mix the lentils in with the cooked vegetables
Place the roasted vegetables and lentil mix in the flan cases.
Beat the eggs, and milk together, pour over the roasted vegetables.
