Mix the breadcrumbs with the spices in a large tray or tin.
In a separate tin gradually mix the flour into the beaten egg until it is of a batter consistency. You may not need all of the flour depending on the size of the eggs.
Use the oil to grease your baking trays or roasting tins.
Take the chicken fillets and dip into the egg mix so they are completely covered. Roll in the spiced crumbs. Shake off any loose crumbs and lay on the baking sheet.
Bake in the preheated oven for 10 minutes, turn over and bake for another 5 mins or until core temperature is at 75oC. Do not overcook as they tend to become quite dry if not cooked correctly. Cooking times all depend on type of oven.
Alternatively use chicken thighs or drumsticks and coat in a Cajun Seasoning and oven bake until cooked through.
