Mix the honey and soy sauce together ensuring that they are well combined.
Put the chicken into a large bowl and add the marinade. Mix thoroughly to ensure that all the chicken pieces are coated evenly.
Arrange in tins and roast slowly until cooked through (please ensure that the chicken is packed tightly into the tins to avoid the honey burning on the bottom). You need to cook this slowly to ensure that the skin crisps up.
