Foundation Course for Catering Staff

The Training Kitchen was born out of an ideal of better food for children. We want to enhance skills that are already being used within the school kitchen, and give catering staff ideas that they can take away with them which they can then implement within their school kitchen, on a limited budget. If you want to be ahead of the game, then this could be the course for you.

DAY ONE

Morning

  • Welcome to the Training Kitchen.
  • The ethos of Ashlyns – how it began and the principles that underlie its mission.
  • Health and Safety within the Training Kitchen.
  • Hands-on practical cookery plus demonstrations, using as much fresh, local and organic produce as possible.
  • Lunch.
 

Afternoon

  • Demonstration
  • Feedback and discussion on the morning’s work and the demonstration.
  • Presentation, Food for Life, the ‘whole school approach’. Given by Jeanette Orrey or Simon Owen.

DAY TWO

Morning

  • A welcome to the second day.
  • Hands-on practical cookery and demonstration.
  • Lunch.

Afternoon

  • Feedback, with discussion on the morning’s work.
  • Quiz on health and safety and food hygiene in the kitchen.
  • Menu planning.
  • Basic nutrition.
  • Ordering fresh produce.
  • Working together for change within your school – an overview.
  • Time to review and reflect on what you have achieved and what you will take away with you from the course.

A pack to take away will be given to every delegate – packed with information to help you start on your way to change.

The fee for a two-day course is £300 plus VAT. Both days will start at 9.30 am and finish at 3.30 pm. Lunch is included on both days.

You will need to bring with you: kitchen uniform or suitable clothing, sensible shoes and headwear and also protective gloves for washing up.
